These delicious fruit’n’nut balls of protein and energy are low in fat, rich in good oils and are a low GI food.

The Hunzakutz usually roll this mixture into one large ball and pick  piece off by hand.

 

I have created two recipes the first one traditional as my people would have, but these ingredients are not readily available outside Hunza, the second recipe is one with more easily obtained ingredients….just as delicious….I like my texture course, you can make it to your taste fine or course.

Preparation

Traditional:  15 mins

Non Traditional:  15 mins plus shaping time

Utensils

  •  Morter and Pestle (optional),
  • Blender (coffee grinder),
  • Bowl
  • spoons
  • spatula or roling pin
  • board or pastry sheet

Ingredients

TRADITIONAL:

200g  Zhuway Hanee ( apricot kernels)

200g   Biranch- batering  (dried mulberries)

200g   Teli   (Walnuts)

2 tbsp  Xil   (water)

NON TRADITIONAL:

100g Zhuway Hanee (apricot kernel)  can get from health food shops

100g Badam   (almonds)

100g Cranberries

100g   Shugulo (Sultanas)

200g   Teli  (walnuts)

2 Tbsp  Xil (water)

METHOD AS FOR TRADITIONAL

Method

In the blender, mortar and pestle or coffee grinder.. finely grind, the Zhuway hanee (apricot kernels), teli (walnuts) and set aside.  then grind the  biranch- batering (dried mulberies).

Mix the ground Hani Baling (nuts) and Biranch-batering, add the xil (water), to make a thick paste.  This can be done with the blender or in the bowl by hand.

Roll the fruit’n’nut paste into  balls (use hunzabytes apricot kernel oil, on hands  to stop mixture sticking to hands), or shape any way you like.
