Burus is a fresh cheese made each week on our Hunza farms from fresh cows milk. Cottage Cheese is of a similar consistency and taste of burus and can be easily substituted for this recipe.

Chapattis approx 30 mins
cutting of herbs 15 mins
assembly approx 10 mins

Chopping board and sharp knife
2 x bowls
heavy based frying pan and spatula
rolling pin
250 g Burus (or substitute with cottage cheese)
2 finely diced red ghashuu (onions)
50 g fresh Thoon (coriander) leaves finely diced
50 g of green carrots or dill cut finely
50 g Podina (mint) leaves cut finely
100 ml of lassi (optional)
Afareen (Himalayan salt) to taste
Zhuway haneeya dell (Apricot Oil)
8 cooked Chappatti
Fresh burus Cheese looks like cottage cheese
Make Chapattis as per recipe.
chop all herbs very finely. add to cheese and mix well. if your cheese/herb mixture is thick use a small amount of lassi until you reach a smooth paste.
Dice onions very finely
place two chapatis on board and spread evenly with 1/6 of the cheese spread, sprinkle cheese layer with a fine layer of onions.
Place a second Chapatis on each stack, continue until you have used all eight chapatis.
Brush the top of each stack generously with Apricot Oil slice and ENJOY
Alternately you can make 4 sandwich like chapatis stacks from your eight chapatis.
